Really? Not much of a recipe. Just a guide of things to throw in a pan and roast at 425 degrees.
2-3 stalks celery, cut into 1 inch pieces
Bunch of carrots, scrubbed, trimmed, cut into 1 inch pieces.
15-20 fingerling potatoes
1-2 red onions, cut into 1 inch pieces
2-3 sweet potatoes, peeled, cut into 1/2 inch cubes
4-6 golden or other beets, peeled, cut into 1/2 inch cubes
mix of chopped herbs (rosemary, parsley, thyme, marjoram)
Salt
Pepper
3 tablespoons olive oil
Toss everything together in a roasting pan large enough to ensure no overlap. Roast for 40 minutes or so.
Done.
