Ligurian Inspired Greens Tart (Flakier Crust Variation)

A variation on the Accidental Recipes: Ligurian inspired greens tart with a much flakier crust, and more greens/less cheese.

Instructions

  1. Mix the flour and salt.

  2. Cut in the butter until fully integrated.

  3. Add the egg yolks and mix until incorporated.

  4. Add 1/4 cup of the cold water, mix with hands.

  5. Add more cold water until the dough just holds together.

  6. Rest for 1/2 hour in fridge.

  7. Roll out to fit in a 9" pie pan or similar.

  8. Butter the pan.

  9. Put in filling: replace ricotta with 1/3–1/2 cup of romano cheese (or parm), then top with breadcrumbs and a bit more cheese instead of a crust.

  10. Bake for 30–40 minutes until crust is done.

  11. Rest for 5 minutes.
